Stop by any morning and find Eva Diakakis—owner of the Bendix Diner for the past 28 years—serving up hot coffee and eggs just the way her customers like them. Diakakis is the third owner of the Bendix Diner, which was established 72 years ago. A waitress since her family bought the diner in 1982, she became the owner when her husband Tony passed away.
